4 cups spring greens
2 roasted beets, halved and sliced
½ cup blueberries
½ cup toasted hazelnuts
2 tbsp. basil leaves, roughly chopped
2 tbsp. mint leaves, roughly chopped
2 tbsp. flat leaf parsley, roughly chopped
¼ cup Boursin Minis®, flavour of your choice
2 tbsp. balsamic vinegar
¼ tsp. Dijon mustard
¼ tsp. honey
1 tbsp. Boursin crumbles, any flavour
¼ cup olive oil
Salt and pepper to taste
Combine spring greens, beets, blueberries, hazelnuts and herbs in a large serving bowl.
In a small blender or chopper, combine balsamic vinegar, mustard, honey and 1 tbsp. Boursin Minis. Pulse until smooth, then drizzle in olive oil until emulsified.
Add vinaigrette and ¼ cup Boursin Minis to the salad and gently toss. Salt and pepper to taste.
