½ watermelon
8.8 oz cherry tomatoes
8.8 oz blueberries
4 small cucumbers
¼ bunch fresh basil
¼ bunch fresh mint
1 lemon
1 tsp honey or maple syrup
2 tbsp olive oil
Freshly ground black pepper
4.2 oz Boursin® Lemon & Rosemary
Wash all fruits and vegetables thoroughly.
Dice the watermelon, halve the cherry tomatoes, and slice the cucumbers.
Gently tear or thinly slice the basil and mint leaves.
In a small bowl, squeeze the juice of the lemon, then whisk in the honey and olive oil.
Season with freshly ground black pepper and whisk to emulsify the vinaigrette.
Arrange the watermelon, tomatoes, cucumbers, and blueberries on plates. Drizzle with the lemon vinaigrette and garnish with basil and mint.
Top each serving with Boursin® Lemon & Rosemary and serve immediately.
